Mace is the lacy covering around the outer shell of the nutmeg nut. It is a brilliant scarlet when harvested but changes to reddish orange after drying. It is strongly aromatic, with a warm and slightly musky flavor.
Applications:
The warm, spicy-sweet taste of mace is a frequent seasoning for baked goods and desserts. Some say mace is what makes doughnuts taste like doughnuts. Mace will enhance meats, stews and sauces as well.
