Description:

Juniper berries are small and round and take three years to mature from pale green to fleshy blue-black. They have a piney, refreshing aroma and impart a sharp, clear flavor to foods.

Applications:

Used widely in Scandinavian and French cooking, juniper berries are added to meat dishes, especially wild birds (including thrush, blackbird and woodcock) and game meats (including boar and venison). They also season pork, cabbage, and sauerkraut dishes and are an essential ingredient in making gin. Juniper berries need to be crushed before using.
