Cloves

Madagascar, Zanzibar, India, Sri Lanka, Spice Island

Description:

Clove is a dried, unopened flower bud that resembles a small, reddish brown nail. Cloves have a sweetly fiery taste that’s delicious in small quantities but medicinal if overdone.

Applications:

Cloves flavor fruit, sweetbreads, rice, meat stews and soups. They’re included in many spice mixtures. Cloves can easily overpower a dish, particularly when ground, so only a few need be used. They enjoy much popularity in North Africa and the Middle East where they are generally used for meat dishes, though rice is often aromatized with a few cloves.
